Italian: Frittata, Greek Inspired

Ingredients:
4          Eggs
2          Spring Onions
1C       Broccoli
1C       Mushrooms
½ t      Dried Origanum
7          Kalamata Olives
Feta Cheese - Palm size piece
Fresh Basil - few leaves

Tip: Put your oven on the Grill setting.
1. Whisk the Eggs, Salt & Pepper.
2. Add the Oil, Veggies & Origanum into your pan.
3. Sautè for it a few minutes on medium heat.
4. Add the Eggs.
5. Adorn with the Kalamata Olives, Feta Cheese & Basil
6. Fry it for +/- 5 minutes.
7. Place it in the oven for +/- 5minutes
Tip: Use an oven safe pan.
Tip: Leave your oven slightly open.
8. Allow it to cool, cut & serve!

My Story: Frittata: Greek Inspired
Frittata  means fried in Italian.
To me it is an efficient vehicle to use little bits, bobs & leftovers.
When my boys see me rummaging, chopping & whisking. I’m always greeted with “Mom are you making frittata? Again!!!”
It is very similar to an omelette or quiche.
This is a great way to add eggs into your diet.
Add whatever you have or like. Experiment!!!
