Amazing Crab Cakes


Forget about Spongebob Square Pants, Mr Crabs and the Crusty Crab Restaurant, my Crabby Patties are ...

AMAZING!


This recipe has both Crab and Tuna in it. Not my favourites at all.

It taught me that embarking on an unknown journey, can sometimes lead you to discoveries beyond your imagination. 


Ingredients: Makes 12

3   medium Potatoes

½t Salt

10  Crab flavoured sticks

1  can of Tuna (170g)

1  Egg

½ Fresh Red Chilli

Fresh Coriander Leaves (Handfull)

½ t  Salt

Black Pepper

Oil (for the frying pan)

 
1. Peel the Potatoes, chop them into small squares, add the ½ t Salt, put them in a small pot, fill it up with boiling water and cook it for 10 to 15 minutes or until they are soft.

2. Once they are cooked, drain them, put them into a bowl, mash them and set them aside.

Tip: You can do this a day in advance and refrigerate.

3. Chop the Fresh Red Chilli and Fresh Coriander Leaves finely.

4. Add the Egg, chopped Red Chillies and Fresh Coriander Leaves to the potato mixture.

5. Flake the Crab sticks, drain the Tuna and add it into the mixture.

6. Season with Black Pepper and Salt.

7. Mix everything well, shape it and put in onto a tray. Refrigerate it for 15 minutes.

8. Add some Oil to a frying pan. Shallow fry each Crab Cake on both sides until golden brown.
