Breakfast in a Cup #2 - the Full Greek


 I know we all love the famous “Spanakopita” a Greek spinach pie.

Just the thought of making this delight can be exhausting.

Save yourself the Extra Calories, Dishes and Drama.Why not try this Super, simple,wholesome breakfast muffin.

Breakfast in a Cup – the Full Greek (Makes 6)

1     Muffin Pan
6     Brown Bread – Slices
Margarine, to spread

Spinach, Feta Cheese, Onions
6     Eggs
1      Tomato
Cheese – just a sprinkle
Paprika – just a sprinkle

Step 1:
  • Preheat the oven to 200 degrees Celsius.
  • Spray Muffin Pan with Spray + Cook or rub out with a bit of Margarine. Set aside.

Step 2:
  • Cut all the ends off the bread.
  • Roll out the bread with rolling pin.
  • Microwave a bit of Margarine and brush both sides of bread.
  • Place into muffin pans.
  • This is your base.








Step 3:
  • Layer: Spinach, Feta, Onions, Tomato, Egg and season with Salt + Pepper.
  • Top with grated Cheese.
  • Sprinkle with Paprika.
  •  Place into oven for 10-15 minutes. Depending on how you like your egg.
