The word “Tikka” means bits or pieces.
It is an Indian dish where small pieces of boneless
Chicken, Meat or Fish are marinated in a spiced yogurt mixture and cooked on a
skewer, over a fire. The fire gives it the authentic smoky flavour, that it is so
well known for.
These Chicken Tikka Skewers taste just as smoky,
even though they are fried in a pan on the stove.
Makes
6 skewers
500g Chicken
Breasts
½C Plain
Yogurt
1 Dried
Red Chilli
4 Fresh Garlic
Cloves
1
Thumbsize knob of Ginger
2T Lemon
Juice
2t Aromat
1t Smoked
Paprika
½t Salt
3T Oil
2. Peel the Fresh Garlic Cloves and Ginger, put it
into a pestle and mortar. Pound it until it forms a smooth paste.
3. Cut or slice the Dried Red Chilli into small
pieces.
4. Add the Plain Yogurt, Garlic and Ginger paste,
Dried Red Chillies, Lemon Juice, Aromat, Smoked Paprika and Salt to the Chicken
pieces. Stir it through.
5. Carefully push the marinated chicken pieces onto
the skewers.
6. Add some Oil into a pan and fry the Chicken
Skewers on medium heat until they are cooked.
