Pineapple Fridge Tart


This is a lovely light dessert with beautiful tropical flavours.

This Pineapple Fridge Tart is perfect for those hot summer days.

Summer days where we enjoy cooking outdoors and spending time with friends and family.

No beautiful meal is ever complete without a sweet treat. So, next time you have to entertain, you should make this tangy tart. 


Ingredients:

1pkt      Tennis Biscuits (200g)    

250ml    Fresh Cream

1can               Condensed (385g)

1can               Crushed Pineapple (432g)

120ml     Lemon Juice


1. Place 1 layer of Tennis Biscuits at the bottom of a serving dish (24cm x 32.5cm).

2. Pour the Fresh Cream into a glass bowl and whisk it until it is light and fluffy for 2 to 3 minutes.

3. Drain the Crushed Pineapple.

4. Add the Condensed Milk, Pineapple and Lemon Juice to the whipped Fresh Cream and fold it gently together.

5. Scoop the creamy pineapple mixture on top of the layer of Tennis biscuits.

6. Put all the leftover biscuits into a small plastic bag and crush it into fine crumbs.

7. Scatter them over the top, cling wrap it and refrigerate for 3 to 4 hours or leave it overnight to set..

8. Once it is set, cut into squares and serve.
