Easy Scones


Breakfast time or teatime. A scone is always something special.


They can be served with sweet or savoury toppings.

When those last minute guests arrive at your door unexpectedly, you will be able to whip up a batch in no time.


If you are looking for an egg-free recipe to add to your collection, I hope that this one will become one of your favourites.


Ingredients:

Makes 8-10 scones

1½C    Cake Flour

1½t      Baking Powder

¼t        Salt

2T         Sugar

50g      Margarine

¾C      Water


1. Preheat the oven to 180 degrees Celsius.

2. Add all the dry ingredients (Cake Flour, Baking Powder, Salt and Sugar) into a bowl and mix.

3. Add the Margarine to the dry ingredients.

4. Use your fingertips to rub everything together until it forms crumbs.

5. Add the Water to the mixture, use a knife to combine the dough. Do not knead the dough.

6. Place the dough onto a well floured work surface.

7. Press it down gently with your fingertips, about 2cm in height. Do not use a rolling pin.

8. Use a glass from your cupboard to cut the round shapes of the scones.

9. Place them evenly spaced onto a well-oiled baking sheet pan.

10. Brush the tops of the scones with a little milk or beaten egg. 

11. Bake them for 12 to 15 minutes or until golden brown.

Cut them in half and top them with whatever your heart desires.
