When my sons were little they used to sing this song:

I guess there is no better way to start a weekend, than with a song
2 Eggs
2C Water
1T Vinegar
3T Oil
¼C Sugar
2½C
Cake Flour
3½t
Baking
Powder
¼t Salt
1. Mix all the wet
ingredients (Eggs, Water, Vinegar and Oil) together.
2. Mix all the dry
Ingredients (Sugar, Flour, Salt and Baking Powder) in a separate bowl.
3. Add the wet mixture
to the dry ingredients. Whisk everything together until the batter is thick and
smooth. +/- 5 minutes
4. Cover with the batter with plastic wrap and allow it to rest in the refrigerator for 10 minutes.
5. Heat a large pan,
drizzle a little oil in the pan and spoon the mixture into the pan with a soup
ladle or pour it with a jug.
6. Wait for bubbles to form on top. Flip it over. They are ready when they are golden brown.
Tip:
This is how you make:
Flapjacks or Crumpets: Spoon 2-3 small blobs of batter onto the pan.

Pancakes: Spoon
1 big blob of batter onto the middle of pan.
7. Serve and enjoy them with butter, a drizzle of syrup or a blob of jam. You can also enjoy them with fresh fruit, fresh cream or ice cream.
