Carrot & Banana Muffins


If you like Banana loaf and Carrot Cake, this muffin recipe is a delicious combination of these two favourites.

Ingredients:

2T    Sunflower Oil

¾C  Sugar

3  Eggs

2  Carrots

3  Bananas

½C  Raisins

1C   Cake Flour

1C    Nutty Wheat Flour

2t   Baking Powder

½t  Salt

1t   Cinnamon

         

1. Preheat the oven to 180 degrees Celsius.

2. Grate the Carrots on the chunky side of the grater.

3. Mash the Bananas with a fork.

4. Add the Oil, Sugar, Eggs, Water, grated Carrots, mashed Bananas and Raisins to a glass bowl and mix well.

5. In a separate Bowl measure all the dry ingredients: Add Cake Flour, Nutty Wheat Flour, Baking Powder, Salt and Cinnamon

6. Add all the Dry Ingredients to the Wet Ingredients.

7. Mix it thoroughly with a spoon until it to forms a sloppy batter.

8. Place cookie cup holders into the cupcake pans.

9. Spoon enough batter to fill it to two thirds of the cookie cup holder.

10. Bake it in the oven for 15-20 minutes.

11. Remove it from the oven and allow it to cool.



Enjoy them with some butter and a lovely cup of tea.
