Sweet Pancakes, Crepes, Soet Pannekoek


Breakfast or dessert, savoury or sweet just the thought of them makes everyone excited.


Some call them Crepes, others call them Sweet Pancakes. In South Africa, we call them “ Soet Pannekoek”. 


Pancake Ingredients: Makes 15

2    Eggs

1T  Oil

3C  Water

¼C  Sugar

¼t    Salt

2½ C Cake Flour


1. Mix the Eggs, Water and Oil in a jug.

2. In a separate bowl, add the Cake Flour, Sugar, Salt and mix.

3. Add the flour mixture, little by little into the egg mixture.

4. Allow the Pancake mixture to rest for 10 minutes.


5. Warm a pan on medium heat.

6. Oil the pan lightly and pour a thin layer of the batter onto the pan. Leave for 1-2 minutes.

7. Flip it over, cook the other side for 1-2 minutes.


8. Remove from the pan, place it onto a dinner plate and cover with a lid.

9. Allow the Pancakes to rest and soften until all pancakes are done.


 
Cinnamon Sugar Ingredients:

1C    Sugar

1½ t  Cinnamon


10. Mix the Sugar and Cinnamon together.
 
Sprinkle each Pancake with some Cinnamon Sugar and Lemon juice and then roll.
