Ramen noodles are egg noodles used in Japanese soups or
broths.
They are cut not pulled.
Instant noodles are convenient but making these
noodles from scratch makes this soup authentic.
How to make Ramen Noodles…
What you need:
¾ C Cake Flour
¾ t Salt
1 Egg
1 T Water
- Add all the above ingredients into a bowl and knead dough into a ball.
- Cover and rest.
- Summer – 30 minutes & Winter – 2 hours.
To shape Noodles:
- Flour a clean surface and roll dough into a rectangle.
- Fold over in ½ = 2 Folds
- Fold over the ½ again = 4 Folds
- Cut into thin strips with a sharp knife.
- Form a little nest.
- Add to Ramen Broth for 5 minutes.
