Palmiers - Crispy Caramalized Cookies!


Who would have thought that these simple butterfly shaped pastries could have so many names.
Elephant ears, glasses, shoe soles, French hearts and hoovies are but a few.
In Mexico they are known as Orejas (ears).
The word Palmier means palm leaf in French.
Anywoo! Let’s get baking…

Palmiers – Crispy Caramelized Cookies!

1 C       Sugar
1pkt     Puff Pastry-Original (400g)
Tip: Please use store bought Puff Pastry.
It is not expensive and life is just too short to make it from scratch.

  • Preheat your oven to 200 degrees Celsius.
  • Lightly spray or oil a baking sheet pan and set aside until further use.
  • Remove Puff Pastry 1 hour before you intend using. Make sure that it is not frozen but almost at room temperature.
  • Sprinkle a clean surface with ½ cup of Sugar.
  • Lay your Puff Pastry on top of the Sugar.
  • Press it down gently with fingertips. Do not use a rolling pin at all.
  • Sprinkle the top of your pastry with the other ½ cup of Sugar.
  • Roll both sides 4 times. It needs to look like a scroll.
  • Slice into 1cm slices. +/- 18 pieces.












  • Place each slice, on the sugary surface, flatten with your fingers and put onto baking sheet pan.
  • Bake for 7 minutes. Turn over. Bake for another 7 minutes.
  • Remove from baking sheet pan, onto cooling rack.
  • Done!
