Raisin Cookies



Raisin Cookies are a much healthier alternative to Choc Chip Cookies.


They are an English teatime favourite.


Also known as Rock Cakes.

Maybe because they have a rough surface like a rock or  they look like little rocky mountains.

Who knows?

 

Ingredients:

This recipe makes 36 cookies

125g  Margarine

1C     Sugar

3        Eggs

1 ½t    Vanilla Essence

2 ½C  Cake Flour

2 ½t  Baking Powder

¼t       Salt

1 ½C  Raisins

 

1. Preheat the oven to 180 degrees Celsius.

2. Add the Margarine, Sugar, Eggs and Vanilla Essence into a bowl and mix everything until it is light and fluffy.

Tip: You can do this by hand or with a Mixer.

3. Add the Raisins, Cake Flour, Baking Powder and Salt to the mixture.

4. Gently fold everything together by hand.

5. Coat the Baking Sheet pans with Cooking Spray or Oil.

Tip: You can also use Grease Proof Baking Paper.


6. Spoon 1 ½ t of the mixture onto the pan.

7. 12 per Baking Sheet Pan. Spread and space them evenly.

8. Spoon a little sugar on the top of each cookie.

9. Bake them in the oven for 12-15 minutes.

10. When they are golden brown, remove them from the oven and allow them to cool.

Believe me these cookies are so delicious you will gobble them up.
