Savoury Egg Pancakes...


I am always in need of “Eggspiration”.

I am no fan of eating eggs unless it’s in a cake or cookie of sorts.

This is a wonderful way to make a simple breakfast look and taste awesome!

Savoury Egg Pancakes: Makes 4

Filling:

8          Sausages (I used Flame grilled smoked Mutton sausages)
¼ C    Passata (Tomatoes)
            Salt+Pepper, to taste
  • Pour Passata and Salt+Pepper into pan.
  • Add Sausages, cover with a lid and simmer for 7-10 minutes.
  • Remove the lid and allow tomato sauce to thicken. +/- 5minutes.
  • Set aside until pancakes are ready.

Egg Pancakes:

4          Eggs
            Milk - just a dash
            Salt+Pepper - to taste
            Whole Cumin Seeds
1          Spring Onion
  • Chop Spring Onions finely.
  • Crush Cumin Seed in a pestle and mortar.
  • Medium Heat – Place a small non-stick pan or well-oiled pan.
  • Into a Jug - Break 1 Egg, add a dash of Milk, Salt+Pepper, Cumin and some Spring Onions.
  • Whisk well and pour into pan.
  • Cover with a lid. +/- 1 minute. This puffs up the pancake.
  • Loosen the edges and flip over. Leave un-covered. +/- 1 minute.
  • Remove from pan.
  • Repeat.

To assemble on a plate:

Bottom: Egg pancake.
Filling: 2 sausage and a spoonful of tomato sauce.
Roll into a pancake and top with a bit more sauce.
