This clear noodle soup has always intrigued me. How could
something look so natural but seem fake, at the same time.
What was the hype? I wanted to know.
I found out that Ramen is a soup of secrets:
Flavour of the broth. Texture of the noodles. Taste of the
toppings.
Each element should be amazing on its own but together complement
each other.
Simple yet so difficult. There are no right or wrongs.
You have to find your flavour!
Smoky, Hot Ramen Soup… (Portions: 4 small or 2 large)
Step 1: Make your Ramen Noodles. Click

Step 2: Make your Ramen Broth:
4 C Chicken Stock / Vegetable Stock
½ Fresh Red Chilli
½ t Salt
½ t Smoked Paprika
1 t Garlic
1 t Lemon Juice
Black Pepper –
to taste
1 Chorico
Sausage, sliced (Optional)
- Place all the above ingredients into a pot and boil for 15 minutes.
- Remove Chorico from broth. Add to stir fried veggies to crisp up.
Step 3: Prepare your Toppings:
1 Egg Plant – Seasoned,
sliced and grilled.
2 Eggs – Boiled and
sliced in ½.
3 C Stir fried
Veggies:
Broccoli, Red + Yellow Peppers, Spring Onions, Baby Marrows
1 t Garlic
1 t Smoked Paprika
½ t Salt
½ t Cumin Seeds,
crushed
½ t Coriander Seeds,
crushed
- Add all the Veggies, Garlic, Smoked Paprika, Salt, Cumin, Coriander, Chorico and a drizzle of Oil to a pan and stir fry together for 3-5 minutes.
Step 4: Cook Noodles:
- Bring Ramen broth to the boil.
- Add Noodles or Baby Marrow Strips and boil for 5 minutes.
- Stir to make sure they don’t stick.
Step 5: Plate up in 4 bowls:
- Ladle broth and spoon noodles equally into bowls.
- Add Stir Fry Mix, Grilled Egg Plant and ½ egg to each bowl.
- Garnish with Fresh Coriander.
