Tarts: Apple Strudel Cups...



Not quite what the doctor ordered but what we need from time to time.

So sweet and simple.

Apple and Raisins, 2 of my favourite foods.


Apple Strudel Cups (Makes 12)

2          Green Apples (Large) / 3 Medium
½ C    Raisins, seedless
1 t        Lemon Juice
½ t     Cinnamon
½ t     Nutmeg
2 T      Sugar
1 T       Breadcrumbs
            Salt, pinch
           
Phyllo Pastry (Store bought)
Butter/Margarine, melted

Step 1:
Preheat your over to 180 degrees Celsius.

Step 2:
  • Peel and chop Green apples.
  • To a Bowl: Add chopped Apples, Raisins, Lemon Juice, Cinnamon, Nutmeg, Sugar, Breadcrumbs and Salt.
  • Stir and mix together well.
  • Cover with Cling wrap and set aside.

Step 3:
  • Lay your Phyllo pastry onto a clean surface.
  • Melt some Butter or Margarine in a cup.
  • Lay down your pastry one layer at a time and brush with Butter/Margarine.
  • Do this 5 times = 5 layers.
  • Cut your pastry into squares and lay your squares into a greased cupcake pan.

Step 4:
  • Spoon your Apple and Raisin mixture into your pastry cups.
  • Break a few pieces of Phyllo pastry on top to cover.
  • Brush lightly with Butter/Margarine.
  • Place into the oven for 15 minutes or until golden brown.
  • Remove from the oven.
  • Dust with Icing Sugar.

Serve:
Warm or cold on a bed of Vanilla Custard or Sweet and crunchy on its own.
