Indian Butter Chicken



This curry is deliciously rich and creamy.

The cubed chicken pieces are cooked in a smooth tomato butter yogurt thick sauce, until it is tender.

Many people believe that if you add butter to a dish, it automatically makes it taste so much better. Butter Chicken is definitely one of those dishes.


Ingredients:

500g  Chicken Breasts

1   Onion

4   Fresh Garlic Cloves

2   Dried Red Chillies

1 ½ t Whole Coriander

1 ½ t Whole Cumin

1½C   Plain Yogurt

1pkt   Tomato Paste (50g)

½t    Turmeric

1½t  Salt

1T     Oil

125g   Butter


1. Wash the Chicken Breasts and cut them into cubes.

2. Peel and slice the Onion and Fresh Garlic Cloves.

3. Cut or slice the Dried Red Chillies into small pieces.

4. Crush the whole Cumin and Coriander in a pestle and mortar.

5. Mix the Plain Yogurt, Tomato Paste, Turmeric and Salt together in a bowl.

6. Add the Oil, Onion, Garlic, Dried Red Chillies, Cumin and Coriander into a pot. Stir and brown it for 3 to 5 minutes on medium heat.

7. Add the Chicken pieces, cover the pan with a lid and simmer for 5 minutes. Stir it occasionally.

8. Lower the heat.

9. Add the Yogurt mixture and Butter to the pot. Once the Butter has melted, stir everything together. Cover it and cook it on low heat for 20 to 30 minutes, until the Butter and Yogurt forms a thick sauce.


Butter Chicken and Naan bread is a match made in Heaven. There is nothing better than to mop up the thick rich creamy sauce with a piece of delicious Naan.
