Hot Potato Salad



Potatoes!

Don’t you just love them?

They are a popular comfort food.

Cold Potato Salad for picnics is quite popular but why not try something new…  


Ingredients:

6    Potatoes

1t   Salt

  
Ingredients for the Salad Dressing:

¼C   Extra Virgin Olive Oil

1t      Dijon Mustard

5t      White Vinegar

          Salt

          Black Pepper



1. Wash the Potatoes well.

2. Peel them or leave the skins on.

3. Cut them into squares, place them into a pot, cover with boiling Water, add Salt and cook for 15 to 20 minutes, until tender.

4. Drain the boiled potatoes and place them onto a foiled baking tray.


To make the Salad Dressing:

5. Add the Olive Oil, Dijon Mustard, Vinegar, Salt and Black Pepper into a bowl and whisk it well.

6. Drizzle the potatoes with half of the Salad Dressing and bake them for 25 to 30 minutes at 200 degrees Celsius, until they are crisp and golden brown.

7. Remove them from the oven and drizzle the rest of the Salad Dressing over the top and toss.
