French Nicoise Salad


I thought that my take on this classic is both different and delicious.

Taking veggies that’s usually boiled to death, eaten with long teeth and preparing them in such a simple, crunchy fashion can only be great.

Nicoise Salad… (Serves 6)

2 C      Fresh Green Beans
2 C      Fresh Spinach
2 C      Fresh Broccoli
2 T      Oil
            Salt & Black Pepper
3          Boiled Eggs
½ C    Black Olives
1 ½ t   Garlic
3 t       Mustard
1 t        Salt or 4 Anchovies
¼ C    Vinegar
½ C    Oil or Olive Oil
            Black Pepper (to taste)

Step 1: Boil Eggs.
Add Eggs, a squirt of vinegar and water to a small pot.
Boil for 6 minutes, drain and cool.
Peel Eggs and cut into 4.

Step 2: Make Salad dressing.
Food Processor:
Add Garlic, Mustard, Anchovies or Salt, Vinegar, Oil or Olive Oil and Black Pepper into your food processor and blitz until smooth.
By Hand:
Add Garlic, Mustard, Anchovies or Salt, Vinegar, Oil or Olive Oil and Black Pepper into a small bowl and whisk until smooth.

Step 3: Prepare Veggies.
Wash Fresh Green Beans, Spinach and Broccoli.
Slice, shred and dice into smaller bite sizes.
Add Oil, veggies, Salt and Black Pepper to a hot wok.
Stir fry for 5-7 minutes.
Pour 2/3 of the Salad Dressing on top of the hot veggies and stir through.

Step 4: Put it all together.
Plate the veggies onto a beautiful serving dish.
Place Eggs on top of the veggies.
Add Black Olives to the salad.
Pour the rest of your Salad Dressing on top.
Done!
