Sweet butternut. A firm favourite.
Why not bake a Butternut pie? I thought.
That’s just what I did!
“No Crust” Butternut Squash Pie (Serves 12)
2 C Butternut Squash,
cooked
1 Can Condensed Milk (385g)
2 t Cinnamon
1 t Ground Ginger
½ t Nutmeg
½ t Salt
2 Eggs
- Preheat your oven to 180 degrees Celsius.
- Spray or Oil a Pie dish or pan and set aside.
- Cut, peel, cook or roast a Butternut Squash until soft. Cool Well.
- Add Condensed Milk, Cinnamon, Ground Ginger, Nutmeg and Salt and Butternut Squash in a bowl.
- Mix Well.
- Whisk Eggs and add to you mixture.
- Pour the Butternut mixture into your Pie dish or pan.
- Place into the oven for 20-30 minutes.
- Remove from the oven and allow to cool before serving with some whipped fresh Cream.
