Posh Breakfast!




Want to impress? 

This would be the way to go.

A breakfast full of robust flavours.

Spicy Meatloaf cup, stuffed with Pan Roasted Vine Tomatoes and crowned with an egg crown.

Mmmmm…..






Preheat oven to 180 degrees Celsius.

Step 1 - Pan Roasted Vine Tomatoes

1 pkt    Tomatoes, Bacio / any small vine tomatoes
Olive Oil / Oil
Balsamic Vinegar
Salt & Pepper (to taste)      
  • Wash and place in a pan on medium heat.
  • Drizzle with a little Olive Oil & Balsamic Vinegar, sprinkle with salt (to taste).
  • Cover with a lid, to prevent splattering.
  • Leave to roast for 10-15 minutes.

Step 2 – Spicy Meatloaf

½ kg   Beef Mince
½ t     Coriander seeds
½ t     Cumin seeds
1 t        Salt
1 t        Smoked Paprika / Paprika
            Black Pepper (to taste)
4          Broccoli florets
1          Spring Onion
            Fresh Coriander leaves
  • Wash Mince and add to a bowl.
  • Crush Coriander and Cumin seeds in a pestle and mortar. Add to the bowl.
  • Chop the Broccoli, Spring Onions and Fresh Coriander leaves. Add to the bowl.
  • Add Salt, Smoked Paprika and Black Pepper. Mix Well.

Step 3 – Egg Mixture

2-3      Eggs
            Milk, Splosh
            Salt & Pepper (to taste)
  • Add Eggs, Milk, Salt and Pepper to a jug and whisk together.

Step 4 – Put it all together!

  • Divide Meatloaf into 6 and squash into muffin pan holes.
  • Place 2 Roasted Vine tomatoes per muffin.
  • Top with Egg Mixture.
  • Place into the oven for 15-20 minutes.
