A Bunny Chow is a proudly South African fast food staple,
which originated amongst the Durban Indian Communities.
An unsliced loaf of
Bread is divided into 4 equal pieces, then the center of the bread is hollowed
out and the remaining Bread is filled with a spicy Curry. The Bread originally served
as a bowl or container.
If ever there was a Curry that anyone should try, Mutton Kebaab Curry would be the one. More so, when it is used as a filling for a Bunny Chow.
500g Mutton Mince
½t Tumeric
½t Ground
Chilli Powder
1t Ground
Cumin
1t Ground
Coriander
1t Salt
1t Garlic
½C Breadcrumbs
½C Fresh
Coriander Leaves
2. Mix it together and make 16 small round Kebaabs.
3. Set it aside.
2T Oil
1 Sliced
Onion
4 Fresh Tomatoes
1pkt Tomato
Paste
1t Salt
½t Tumeric
2-3 Sliced Fresh Green Chillies
5. Add the Chopped Fresh Tomatoes, Tomato Paste, Salt
and Tumeric. Stir it and simmer for 5 minutes.
6. Finally, add the Kebaabs and Fresh Green Chillies and
cook for 10 minutes.
7. Cut an unsliced loaf of Bread into 4 equal pieces.
Hollow out the insides of the Bread.
8. Dish the juicy Mutton Kebaabs and sticky Tomato
Gravy into each quarter of Bread.
9. Top each Bunny Chow with extra sliced Green
Chillies and Coriander Leaves.
