Modern Egg Salad...



We have been so lucky to have such beautiful sunny days lately.

Love the Sun, Love yellow…

Why not give an old classic a modern twist?


Modern Egg Salad

2               Eggs
1 T            Water
                 Salt & Pepper (to taste)
1 T            Oil
2 T           Cheddar Cheese, grated
2 C           Salad Leaves 
                 (Rocket & Butter Lettuce)
½             Cucumber, sliced
1                Spring Onion
1 T            Sesame Seeds
                 (Black or Toasted)

Step 1: Make an Omelet
  • Add Eggs, Water, Salt and Pepper and whisk well.
  • Add Oil to a shallow pan, pour Egg mixture to make Omelet.
  • Top with Cheddar Cheese and cook until golden.
  • Remove from the pan to cool and slice into thin strips.


Step 2: Mix your Salad
  • Add Salad Leaves, Cucumbers, Spring Onions and Omelet slices in a Salad bowl.
  • Top with Black or Toasted Sesame Seeds.

Step 3: Make your Salad Dressing

1 T                   Rice Vinegar
1 T                   Soy Sauce
1/3 C               Olive Oil
  • Add Rice Vinegar, Soy Sauce and Olive Oil.
  •  In a jar and shake well.
  • In a jug and blitz with a stick blender.
  • Drizzle generously over the salad and allow the egg to absorb salad dressing.

Super for your taste buds but even better for your waist line.
An absolute win, win!
