Apricot Jam Squares


Craving something sweet?

Everyone always buys a big tin of Apricot Jam.  You know you are never going to use all of it at once, so you put it into your fridge and there it sits. 

Right?

You all know what I’m talking about. 

So, haul out your Apricot Jam and create this crumbly delightful tart.


Ingredients:

250g Margarine

1C    Sugar

2       Eggs

1t      Vanilla Essence

4C    Cake Flour

4t      Baking Powder

¼t     Salt

1C    Apricot Jam

         
1. Preheat the oven to 180 degrees Celsius.

2. Cream the Margarine, Sugar and Eggs together.

3. Add the Cake Flour, Baking Powder and Salt to your mixture and fold it in until it forms a crumbly dough.

4. Oil or spray a sheet pan.

5. Place ¾ of the crumbly dough on the sheet pan (27cm x 32.5cm).

6. Press it down firmly until all the dough has filled the entire bottom of the pan.

7. Spread the Apricot Jam generously over your dough.

8. Tear and toss the remainder ¼ of the crumbly dough on top of the jam.

8. Place into the oven and bake it for 20 minutes.

9. Remove from the oven, allow it to cool.

10. Cut the tart into even squares.


Crumbly-Melt- in- your -mouth goodness!
