Mediterranean Cauliflower



Cauliflower seems to be the latest buzz food.

It’s making an appearance everywhere.

Cauliflower is extremely bland and needs a lot of flavour encouragement, I chose the Mediterranean route.

This is my spin on this new super food. 


Ingredients:

3C    Cauliflower

2       Fresh Tomatoes

1pkt  Tomato Paste (50g)

½C   Black Olives

1 T     Oil

¼t     Origanum

          Salt & Black Pepper (to taste)

          Feta Cheese (to taste)


1. Cut, clean and separate the Cauliflower into smaller florets.

2. Place them into a pot, cover them with water and boil on medium heat for 10 minutes or alternatively steam it.

3. Strain, drain and set it aside.

4. Peel and chop the fresh Tomatoes.

5. Add the Oil, chopped Tomatoes and Tomato Paste into a pan.

6. Simmer it for 5 minutes on medium heat.

7. Add the chopped Cauliflower and Black Olives into the pan. Season it with Salt, Black Pepper and Origanum. Simmer it for 10 minutes.

8. Dish it onto a serving plate and top it with Feta Cheese.


This dish is lovely either hot or cold.
