Tomato smothered Green Beans


What is more comforting than the earthy flavours of Fresh Green Beans smothered in a simple Tomato sauce and topped with Fresh Mint Leaves?


Nope, cannot think of anything right now…

This is good old fashioned slow cooking. Something, that doesn’t happen often in my kitchen but it is so worth the time.


Ingredients:

2T   Oil

1     Red Onion

3C  Fresh Green Beans (500g)

2     Fresh Tomatoes

       Salt (to taste)

       Black Pepper (to taste)

       Fresh Mint Leaves

1. Peel and slice the Onion thinly.

2. Top and tail the fresh Green Beans.

3. Skin and chop or grate the fresh Tomatoes.

4. Add the Oil and Onions into a pan on medium heat. Sauté for 2 to 3 minutes.

5. Add the Green Beans, stir it through and simmer for 5 minutes.

6. Finally, add the Tomatoes, Salt and Black Pepper.

7. Cover it with a lid. Turn down the heat and slow cook it for 20 to 30 minutes or until the Green Beans are tender.
