Italian Bruschetta



Bruschetta is the Italian word for Toast.

Pronounced: Broo-ske-ta.

Next time you entertain, this recipe will surely impress your guests.


Ingredients:

2    Tomatoes

6    Fresh Basil

1T  Olive Oil

½t  Salt

½t  Origanum


1   Ciabatta Bread

2   Fresh Garlic Cloves

     Olive Oil

300g  Smoked Mozzarella


1. Dice the Tomatoes into small pieces.

2. Slice the Basil.

3. Add the Tomatoes, Basil, Olive Oil, Balsamic Vinegar, Salt and Origanum in a bowl and mix everything well.

4. Leave it to rest. This will allow the flavours to develop.


5. Slice the Ciabatta Bread 2cm thick.

6. Sprinkle it with some Olive Oil.

7. Warm a pan and toast the bread on both sides until they are golden brown.

8. Rub a fresh garlic clove over the top of the warm bread.


9. Slice the Smoked Mozzarella.

10. Place it on top of the toasted garlic Ciabatta.


11. Top it with the fresh tomato salad.


12. Garnish it with fresh Basil and drizzle it with a little Olive Oil.
