Italian Minestrone Soup


I love this old Italian Classic.

Minestroni = mix of things + Pasta

Chop and plop, put everything into a pot, cook it for a few minutes and enjoy.

Ingredients:

1T   Olive Oil

3t   Garlic crushed

1t   Origanum

1    Onion

3    Carrots

2    Celery Sticks

5    Baby Marrows

1    Dried Red Chilli

1t   Black Pepper

½ t Salt

3C Chicken Flavour Stock

1  Chopped Tomatoes Can

1pkt  Tomato Paste (50g)

1   Can of Beans

Tip: You can use any of these beans:

Cannellini/Red/Barlotti/Lentils/Mixed Beans

½C  Small shaped Dried Pasta

        Bunch of Fresh Basil Leaves


1. Chop all the vegetables into small cubes.

2. Add the Oil, Vegetables, Garlic, Chilli and Origanum into a pot and fry everything for +/- 5 minutes.

3. Add the chopped Tomatoes, Tomato Paste, Beans, Chicken Stock and Black Pepper. Mix it together and simmer for 10 to 15 minutes.

4. Add the Pasta and Salt, stir through and simmer for a further 10 minutes.

Super easy but so healthy and delicious!
