Rustic Roasted Vegetables






This is the ultimate companion dish for Grills, Roasts and Fries.


Ingredients:

1T  Oil

1   Red Onion

1   Red Pepper

1   Green Pepper

6   Baby Marrows

1   Butternut squash

3T  Syrup

      Paprika (to taste)

      Salt (to taste)

      Black Pepper (to taste)

1. Pre-heat the oven to 200 degrees Celsius.

2. Wash, peel and chop all the vegetables into big chunks.

3. Line a baking sheet with foil, always place the shiny side down.

4. Place the vegetables onto the foiled baking sheet, drizzle it with a little Oil, Syrup and season with Salt and Black Pepper.

5. Cover it with another piece of foil and put it into the oven.

6. Turn the roasted vegetables over after 15 minutes, cover it again and return it to the oven for another 15 minutes.

7. When the roasted vegetables are ready. Slowly uncover the foil, allowing the hot steam to escape. Roast the vegetables uncovered, until they are golden brown around the edges. Add extra Syrup, Salt and Black Pepper, if needed.

Nothing compares to the sweet, smoky, chewy textures of this dish.
