I was surprised to discover how sweet and nutty the taste of Braised Cabbage is.
Even more so, by how simple it is to prepare.
Cabbage is a vegetable that is often overlooked, it is not always a first choice.
This recipe will most definitely change that.
1 Onion
1 Dried
Red Chilli
1T Oil
½ Head of
Cabbage
Salt
Fine White Pepper
1. Slice or shred the Cabbage into thin strips.
2. Rinse the shredded Cabbage under water.
3. Peel and slice the Onion.
4. Cut the Dried Red Chilli into smaller
pieces with a kitchen scissors or knife.
5. Add the Oil, Dried Chilli and Onion into a pan and
brown everything for 3 to 5 minutes on medium heat.
6. Add a layer of shredded Cabbage topped by a layer
of Salt and Fine White Pepper. Stir it through. Allow it to reduce in volume
for 2 minutes, then repeat this again, until all the Cabbage is in the pot.
7. Lower the heat and cover the pot with a lid and
braise it for 15 minutes. Cabbage releases a lot of water during the cooking
process. Stir it through often, until it becomes a caramel brown and all the
water has evaporated from the pot.
Braised Cabbage is a wonderful side dish.
